She Wants Meringue...
and do the Cha-Cha* I saw a slice of meringue topped pie in the cafeteria at work today. My mouth began to water...lemon meringue sounded so fresh, a tad tart, a bit sweet--something just seemed so yummy. Unfortunately, a closer look revealed that it was coconut cream pie, not lemon. Now that's just wrong--coconut CREAM pie is supposed to be topped with velvety dollops of whipped cream, not light and lightly tanned meringue.
So, now I'm craving lemon meringue pie. Is there a low-fat, low calorie way to satisfy me? Perhaps...I found this recipe for Lemon Meringue Cookies (on ABCNews.com) that just might do the trick. I may try making some tomorrow. With Phil, who hates lemon meringue anything, out of town,** he won't have to suffer my weird tastes.
UPDATE: [02.24.04] I had a few doubts. I don't like store-bought meringue "cookies" or "candies" of this style, but fresh, home-made meringues are a whole other ballgame.
I made these light yellow beauties using two organic, cage and hormone-free, vegetarian fed, free-roaming chicken eggs. Before even baking, the fluffy meringue was quite tasty (and quite glossy considering it isn't an Italian meringue, which tends to be glossy and smooth). I even went the extra step of using my pastry bag and large star piping tip to make them look nice and keep the sizes more uniform. They are WONDERFUL and surprisingly quick and easy to make.
I'm dubbing them Lemon Meringue Kisses (even though mine aren't too chewy--just light). AND remember...just 23 fat-free calories per kiss. Naturally self-limiting, the acidicity of the lemon zest means you can't eat more than a few or your tongue gets kind of tingly.
*Apologies for invoking Mannilow. **With the new job, I don't have much vacation time accrued. Conversely, as Phil has been with his company for years and years, he has a slew of time off for the year. After his little trip, we'll be more even when joint vacation time rolls around.
