Aye Carumba! That's Good Eats! Last Sunday when I was in San Francisco, I had lunch with a friend and colleague at Lori's Diner on Powell Street. The diner appealed to the retro-kitschy side of me (of both of us actually). Lori's had great food and atmosphere.
We elected to have breakfast for lunch, and I tried to pick something out of the ordinary and still on the healthy side of the street. I selected Lori's Taco Ole Omelette with vegetarian chili (with black beans), avocado, salsa, Jack cheese and sour cream. The chili, cheese and avocado were tucked inside with salsa and sour cream on top. It was delicious and had a plethora of good-for-you veggies and protein...along with some not-so-great-for-you, but oh-so-tasty fats.
For the record (vinyl, 33-1/3 on the jukebox - naturally!) it was half the price of Saturday night's dinner in Chinatown and had at least twice the flavor and healthful ingredients to satisfy this vegetarian's palate. Diner food is (to quote a FoodTV host) good eats!
Now that I'm back home and had to do grocery shopping, I have decide to adapt the dish and create Leigh-Anne's Taco Aye Carumba Omelette. I'll be using Eggbeaters, a fat-free vegetarian chili, keeping a moderate amount of avocado (a good-for-you fat), salsa (one of our favorite fat-free condiments), and swapping the full-fat Jack and sour cream for a fat-free version of cheddar and sour cream.
